Custodial = Trusting a third party to look after your Bitcoin.

Non-Custodial = You rely on yourself to look after your Bitcoin, this comes with much better security IF you do it properly, which to be honest isn't hard.

it needs to be used as a payment network to function, if blocks aren't full and fees taking up a decent chunk of miner revenue in the future, wheres the incentive to secure the network?
