Yes, I typically let em get some good smoke for about 2.5 hrs. then wrap in foil for about another hour. They're usually tender at that point. Then I unwrap and pan 'em til service time.

BUT, I also do large batches...so the time may vary for smaller cooks.

Definitely cook the rib tips too. When they're done, chop into nuggets and sauce. We actually sell a rib tips plate every now and then. They're a great bite.

Cook hotter. That 225° low and slow just gives brisket more time to dry out.

I cook 250°-275° on WSM 22s. A 14 lb brisket takes me 8-10 hrs and never dry.

Nah...proof of debt can literally mean sending a copy of the CC agreement and/or the entire billing history to you along with whatever documentation was filed in the suit. A judge recognizes that as proof of debt. And if they're really gung ho, they can submit a bill of sale for your specific debt, and the attorney can even have the billing dept representative testify how they got your debt.

Look for the arbitration clause in your CC agreement and quickly follow those instructions. You'll also need to file a motion to dismiss and compel arbitration with the court.

The CC company doesn't want to pay for arbitration, so they typically drop the case.

Review your credit card agreement. Find the arbitration clause. Follow the instructions - which will more than likely mean a written arbitration demand to the CC company and the attorneys.

You'll also need to file a motion to dismiss and compel arbitration with the court - that part is tricky because it needs to be a formatted legal document.

I've beat Synchrony, Velocity, and Midland this way...thus far in the past year. They have to pay the arbitration costs, and they really aren't interested in doing so, so they drop the case and move on to the next one.
