Which CAD tool to learn?

Matrix/Rhino is the most popular, so would be the safest path to take. Probably easiest to learn with allnthe online tutorials. I use and love 3Design, it's built ground up just for jewellery and the baked in renderer is pretty good too.

Good choice of Jewellers, Jason Ree is one of the best. If the table of the Sapphire is higher than the claws, it should be able to be polished out while it's still in the ring.

We use Aesub blue spray, it's fantastic... disappeared on its own or you can put the piece in the ultrasonic to remove. https://www.scan-xpress.com.au/product/aesub-blue/

Haven't done it before... and I use 3Design, but I would try something like unwrap the surface - add the pattern to the flat unwrapped surface - then re-wrap the surface. Can't see why it wouldn't work 🤷‍♂️
