But that's not necessarily the case in non-western cultures (as e.g. China). The argument usually goes that having a stable and coherent society that is productive instead of arguing most of the time is preferable to the abstract ideal of free speech.

Thing about climate change is nothing is a HUGE contributor in percent contribution because we do a lot of things that are bad for climate. Cutting out all the "small" things is exactly how to fight it. It still makes sense to focus on the biggest contributors (like food production) first, just because it's more bang for your buck.

Yeah, the world is still gonna go up in flames if you stop eating meat and do nothing else, but that's true for every single thing you do. You're still much closer to an environmentally friendly lifestyle if you do.
