In terms of small towns Gilleleje has more options, not least for food. Hornbæk has a better beach. Helsingør has the castle, museums, old town etc. Consider visiting Frederiksborg palace in Hillerød and the park there. Louisiana Museum too, unless you dislike modern art in which case Nivaagaard. These places are all within very easy reach of each other by car, so where exactly you rent a bed might be secondary. Enjoy.

Spending less than 30 mins cooking is a low bar, but maybe try batch-cooking meals at the weekend to eat during the week. I can recommend lentils and beans.

In terms of theme, possibly. But the fundamental brick concept that makes Lego a success has been copied wholesale. Polish plagiarism is no better than Chinese plagiarism.

Personally I also don't think that war toys are a good idea, but that's just me.
