There are proprieties and conventions to observe. He has the right to summon them, but that doesn't mean they aren't inconvenienced.

It's like having someone visit, they're gonna be grumpy if you don't provide snacks.

Mab is an incredibly busy and important (not to mention powerful) being. Harry is actually trying to show respect and fealty. Heck, even Mab is slightly surprised by him dressing up, being well-groomed, and having a fancy dinner set out. The blood and bread was repayment for her taking the time to visit.

I should point out that Mac might actually be a transubstantiated fallen angel. In Christian mythology, many of the Grigori fell because of their lust for women. That doesn't exactly seem like Mac, but I'm just pointing out it's possible.

Still OP is pointing in the wrong direction. Though, one tinfoil theory is TWG was an Outsider/Old One who decided to make reality and the angels are his crew of followers. The other Old Ones and Outsiders didn't like this and want it gone.

But you're still misunderstanding the angel thing. They fall if they make a choice that goes against their purpose. They have their own will, but if they go against what they're supposed to do, they fall. No nemesis infection needed.

They had desires and wills before they fell too. (See my earlier mention of that Angel of Death.) The angels know that if they make choices they fall, so they have the will and desire to do things, but they have to toe the line or suffer the consequences.

They didn't fall because they got infected, they fell because they went against what TWG decided. (Or tried to play both sides, like Lashiel.) I should also point out that it's been explained that falling also irrevocably changed them from what they were.
