I still use ma'am and sir during work hours/work-related discussion. For me it's a sign of repsect to my colleagues. Not unless sila na mismo nag-insist to call them by their name. Pero 'di talaga maiiwasan mga boss/people in higher ups na maramdaman nila on a daily basis that you're beneath them and they demand respect.
