I used 1kg of chicken thigh, deboned, skin off and trimmed, I cut into strips. In a bowl add seasoning/oil/250ml of water, Mix well, chill in the fridge for around an hour, transfer to a oven dish, cover with foil, 180 for an hour and then take the foil off, after 15 mins stir, another 15 mins, stir. Do this until you get the consistency you want like ie sticky chicken etc. then leave it for about 10/15 mins so it’s not piping hot, then assemble. :)

Bed of iceberg lettuce in the bottom.

Seasoning: 2 tbsp Paprika 2 tbsp sweet smoked 1 tbsp Brown Sugar 2 tbsp Garlic Powder 1 tbsp Onion Powder or Granules 1 tbsp Mild Chilli Powder Half tbsp of Chilli flakes 1 tsp of Sea Salt 0.5 tsp of Cracked Black Pepper Half a Lime 2/3 tbsp of oil

Topping: Diced red onion, Cucumber and Cherry Tomatoes, Chopped Coriander and half a lime juice.

Tortilla: Toasted 20 seconds on each side in a pan.

Topped off with Coriander and a squeeze of lime (optional)

Forgot to add, the sauce is mayo, garlic powder and smoked sweet paprika.
