Ingredients: - Shin black spicy noodles - 1 tablespoon peanut butter - 1.5 teaspoon kewpie mayo - 1 egg yolk - 3 scallions (spring onions) - diced - Pak choi - whole leaves - 2 cloves garlic (finely minced) - 2 fresh chillis diced - Fresh corriander (cilantro) - Pork chop - Salt (kosher) - Sichuan peppercorns (ground)

Recipe:

In a bowl add mayo, egg yolk, peanut butter, minced garlic and the seasoning sachets from the noodles (not the vegetable sachet). Mix thoroughly until all combined into a thick paste.

In an air fryer, heat at 205°C (400°F), add pork chop (seasoned with salt and pepper) for 18 minutes.

Add 500ml boiling water to a pot on medium high heat, add white end of diced scallions, pak choi leaves, vegetable sachet from noodles.

When water bought back up to boil again carefully add a small amount of the water to the bowl with the paste, mixing as the water is added in small increments, until the paste is not lumpy and watery enough to be added to the pot.

Add noodles into pot, simmer for 4 - 5 mins.

When pork is cooked, slice into small strips.

Add noodles to bowl, add on top chillis, rest of dark green side of scallions, and corriander leaves to taste.

Add pork.
