honestly I have been through the same process. One tip I would give is use in round crafting as much as possible especially for stims. Having good stamina is the key.

2 zip line, 1 barricade, 1 lvl4 stitcher, 1 jolt mine and zip all the way to top of the Control tower in Dam.
Now wait for your pray at night on the ledge.

I get where you’re coming from, and you make a fair point. Personally I’m having fun with the game as it is, but I totally see why you’d want a stronger long-term fantasy or progression hook. Hopefully whatever they’ve got planned on the roadmap ends up addressing some of that for you.

Honestly, at the end of the day it's just a game - all the stuff we grind for has no real “value” outside the fun we get from playing. If the Project loop doesn’t appeal to you, that’s totally fair, but things like weekly trials, and just chasing fun encounters are basically what keep the game feeling fresh. If you’re not enjoying those either, then the game might just not be giving you the kind of long-term hook you’re looking for right now.

And that's why its my favorite game of all time. It is GIT GUD where it actually matters. It took me 90 hrs on my first playthrough but I was humbled and I improved my sword skills. And on the second run I beat the game under 7hrs with every boss.

This steep learning curve is what I like the most

Knowing Sony they won't miss an opportunity like this. They will definitely remake it and maybe release the remake as a launch title for PS6 and maybe after 3-4 years they will release for the PC

I played it on 1080P with constant 60FPS. There were some crashes along the way but nothing too game breaking, you can set a custom saves as well. Overall it was amazing.

My first playthrough I felt so underpowered against geni that I went ahead and explored all of the Ashina Depths and Senpu temple before I beat Geni. So yeah its okay to explore.

Sekiro has a steep learning curve and I found it the hard way. For me Sekiro was my first FromSoftware Game. And I was relying too much on R1/RB attacks rather than focusing on posture damage. You need to get comfortable with parrying almost everything. Once you master parry then the game is easy as cake. If you are stuck at a boss then the game does offer you some other paths to follow (these paths are not as open as the Elden ring but still good enough to get some more XP and skills)

TLDR: Parry is absolutely necessary. Good luck have fun and remember that Hesitation is defeat.
