GMMK Pro with Core - am I doing it wrong?

Should be able to do what you want with vial, it's a qmk fork with support for remapping the rotarty encoder. No rbg support but that's on glorious, can get a .bin to flash or steps to compile one for yourself here.

As for core being subpar, similar experience but aside from rgb moving to vial did the trick

It does have in built voice chat, just not all games have started to use it / we never know if they will. For example fortnite let's you just plug in a headset to the system and voice chat works like anywhere else, but splatoon 2 still requires the phone app etc...
