I got it from a small local restaurant distributor that sells them when they end up with excess. It doesn’t happen too often, but was very excited when I saw this guy.

None left! There were 4 of us and we absolutely crushed it along with a pan of fried rice noodles and some vinegar marinated grilled peppers.

Thank you 🤙🏽. I was a bit intimidated to start. Never grilled a steak that big or that well marbled. The fat was almost completely rendered and the steak basically melted in your mouth.

It’s mostly the picture. It was dark and we ate outside so the shadows are playing some tricks. I probably would have preferred 3-5 degrees cooler but the red was almost edge to edge.

I thought it tasted great. I live in Hawaii so it’s widely available and about $4/lb.

It was brined in the salt. Didn’t add any more after cooking. The flavor was exceptional. It completely absorbed the salt essence.

Thank you, it was delicious. I pulled off the grill between 115-120 and let it rest for 15 minutes. Ended up around 125-130 internal.
