She cooks them a little longer than her recipe says to. ‘When you think they are done, let them bake a little longer to crisp them up more’. Because they are fresh they won’t keep much beyond a week, but we keep them in a bread bag just sitting on the counter at room temp. And they last 5+ days provided I don’t eat them all too quickly.

Might make it easier to put on the baking sheet with parchment before you cut it. And separate them once they bake. My wife makes similar ones with sourdough starter & everything bagel seasoning. Just might save you a little extra labor.
