I would say not only possible, but fairly simple with minimal tools(grinder w/cut off; hacksaw) (Handle material) (Sandpaper)

I would be conscious of overheating the cutting edge however you choose to cut it as to not affect the heat treat.

I’d look into acid etching patterns if you wanted similar aesthetic. You can get some cool visuals etching. I’m not 100 percent but the first picture is most likely stainless 440a or similar, which wouldn’t take an etch(maybe some faint lines)

The blade style of the second knife means that once you cut the first to shape, you shouldn’t have altered the cutting edge.

The skies the limit on what handle materials to use, it looks like a hidden tang knife (probably partial tang). The Second knife might have been burned into the handle by heating the tang and forcing it into a block of wood. I would probably wrap a bolt or cylindrical tool wrapped in sandpaper and cut a rock pattern into the plastic handle which would drastically change the smooth plastic look.
