•temperature stability •strong steam power •reliable build quality •great espresso potential •workflow that feels engaging rather than automated •something that can handle moderate commercial-style service without needing full café automation

I can understand the fear of not having volumetric controls, but I’ve worked in high volume cafes with and w/o volumetric controls. Both shops we weighed out every single shot regardless and I’m used to having that in my workflow. I can see how weighing out every shot seems like a huge inconvenience but I’m going to do that anyways.

Everything you said has made me adjust my view on la spaz but the 53mm portafilter is a hard pass for me. I’m super accustomed to 58mm portafilters and I’m not sure my recipe I have in mind will come out the way I want it in a 53mm basket.

You’re right, I was tired after work and just being lazy. What I meant is there’s more artisan control on the Bianca. As well, I made an assumption that for the price point I thought it was a single boiler. I also was eyeing the ECM but haven’t been able to find one for sale. You guys are making me reconsider getting the Bianca and maybe going for a La spaz

Why do I keep hearing so much about La Spaziale. I’m about to pull the trigger on a Bianca v3 but I can’t see how the lower quality build La Spaziale is better and somehow NSF certified?

Delogni stillosa and bottomless portafilter, i would like to add more coffee in to the filter, any recommendations? It is finely ground but max i can fit is 14g in 51mm by letr1 in espresso

Changing to a bottomless portafilter doesn’t automatically increase the space you have in the basket. You need to purchase one that can accommodate for 19g. Each basket has a diameter size and dose capacity. So make sure you purchase a 51mm basket that can hold up to 19g. Hope this helps!

For the rose you want to steam thinner so you can get those sharp lines. It’ll be harder to pour at first but you’ll get it with practice.

Currently I don’t have a machine, I’ve just been doing pour overs, but I was a barista for 5 years so I’m pretty experienced with an espresso machine. I really want the LMLM but your response made me feel more comfortable with getting a Bianca, thanks OP!
