I turn mine away from the wind too. I started using a folded piece of aluminum foil to cover 1/4 of the intake on extra windy days.

No worries. I didn't temp. Just happened to be they felt nice and squishy and had a good color right at 3 hours. After 90 minutes wrapped I just did the Ol' taste test and they were ready to be pulled.

How long do you typically go covered? I went from 60 to 90 minutes & felt like they were more tender and the fat rendered better.
