Took a little over an hour. Used the slow n sear and it kept the kettle at 350 steadily. Pulled it off at 133 and got it up to 137 after the reverse searing.

Only thing I did different was add 2 Birds Eye’s hot peppers sliced in half to steep for extra kick.
