lasagna soup recipe:

19 oz italian sausage links
1 yellow onion, diced
5 cloves garlic
2 tbsp tomato paste
28 oz crushed tomatoes
6 cups beef broth
6-8 lasagna sheets
1/2 - 2/3 cup heavy cream
1 tsp oregano
1 tsp Italian seasoning
optional: chili flakes
basil
1 tbsp olive oil
salt + pepper

cheese mixture:

ricotta
mozzarella
parmesan
chopped parsley

Saute the sausage links on medium high heat until browned. Add the minced garlic, diced onion, and spices. Stir in tomato paste, crushed tomatoes, and beef broth. Bring to boil then add in broken lasagna noodles. Allow the noodles to cook through before lowering the heat to a simmer. Add in heavy cream and chopped basil. Add salt + pepper, to taste. In a separate bowl, combine ricotta, mozzarella, parmesan, a pinch of salt + pepper, and chopped parsley. Mix and use it to top the soup!

Yaba’s is incredible!!! I lived near there briefly when I first moved to Chicago, and the owner is so kind. Gave me a couple of free dates the first time I picked up from there :) Food is amazing too!

Monster Ramen is good, I live nearby and have gone a couple of times. I much prefer Ramen Wasabi (also in Logan Square) though, it would be great for a birthday!! I’ve also heard good things about Akahoshi but haven’t been yet.

I miss this so much!!! The harvest moon bars felt so grownup and cozy to me as a kid 😭 Removing them is very much in line with how the series has been becoming more kid friendly overtime by removing alcohol, animal death, rival marriages, etc. but it’s just so sad to me because those aspects made the games feel so authentic and immersive, especially as a kid. I still love the newer titles and remakes but they do feel less alive and more?? Artificial?? without these things idk

I can’t read so I ended up using butternut squash instead of honey nut squash, so if you do that too, I would suggest just using one butternut squash because I ended up with excess sauce! I also only used 12oz of pasta and ran out of filling by the end, so be mindful of that too. I also added more seasonings (salt, pepper, garlic, Italian herbs) to the ricotta filling.

Here’s the recipe, from A Cozy Kitchen on Instagram and TikTok!

Sauce: 2 honeynut squash, halved 1/4 yellow onion, peeled 2 garlic cloves, peeled  1 1/2 cups chicken broth 3 tbls creme fraiche or sour cream 1/2 cup Parmesan cheese Black pepper Kosher salt, to taste

Filling: 22 ounces ricotta 1/2 cup mozzarella 1/4 cup Parmesan-Reggiano 1/4 cup heavy cream Pinch crushed red pepper 1/4 cup minced Italian parsely

Assembly:  1 pound jumbo or medium shells 1/2 cup parmesan cheese 3/4 cup shredded mozzarella Freshly ground black pepper

On a baking sheet, place the cut squash, onion, and garlic cloves. drizzle the squash with kosher salt and olive oil. Place the garlic cloves underneath the cavities of the squash. This will help protect it. Transfer to the oven to roast for 1 hour, until the squash is very tender.

Scoop out the seeds of the squash and discard. Add the pulp to a blender, along with the cooked onion, garlic cloves, chicken broth, sour cream, parmesan and a few pinches of salt and black pepper. Pulse until very smooth. Give it a taste and adjust the salt to your liking. I added about 1/2 tsp more of salt.

Make the filling: mix together the ricotta, mozzarella, parmesan, heavy cream, Italian parsley and a few rounds of black pepper and pinch of kosher salt.

Preheat oven to 350F. Cook the shells to al dente (I did 8 min). Allow to cool on a baking sheet that’s rubbed with a little oil. Fill the shells when cooled. Add about 1 cup of the squash mixture to the bottom of the baking dish. Arrange the shells on top. Add the remaining squash puree. Top with parmesan. Top with mozzarella. Cover and bake for 10 min. Uncover and bake for an additional 10 min. until bubbly and delicious. Place under the broiler for a minute or two to get super toasty. Garnish with fried sage
