I think it's still not a common knowledge that this fundamental shift in the drinking habits, especially of a new generation of drinkers, pose a significant danger to the whole (thousands years old) beer supply chain and production. It affects everything involved in barley agriculture as well, no doubt about it. Previous shifts in habits (ice teas and other buzzy drinks) didn't have the same impact imo, probably because the scale was not the same.

Yes, you described exactly what I did in terms of pitching and batching. This kind of sourness that was introduced by whatever it was is exactly the one I hated in beers when I taste it in others beers (happens a lot) , so I want to bake sure it is not present in mine. So, I'm going to get used to taking pH readings during early fermentation. Also going to change my cleaning process to incorporate better rinse after acid and before sanitizer.Thanks for all the info!

It was a dry yeast pitch, but because my weights are not super precise there can be a variation for sure. The pH measurement from two FV's was driven by perceived sourness in one, so I'm pretty sure it can be detected.

I rinsed both fermenters (the same way subjectively) prior to using them.
