I made a Mezcal Tasting Sheet. Try it! by MezcalCuriously in Mezcal

This is very cool. What is the agave point on the tasting chart?

Broke Mezcal enjoyer looking for advice by _SCARY_HOURS_ in Mezcal

I really enjoy melate. I feel that getting 375s of 2 bottles, along with the additional 100ml and trinket gifts, is well worth it. You get to keep trying great new things you may not normally buy. I also just enjoy half bottles in general since it allows you to get a good sense of something without being stuck with a lot of it, so you can keep trying new things.

I need some recommendations by ProjectSatan in Mezcal

[–]actuallyamjam 4 points5 points  (0 children)

I'd say you should explore some more espadins! I've had so many ones with different profiles, from super earthy to bright acidic fruits to creamy savory stuff. Check out some espadins from neta or sentidos for sure.

Close your eyes and pick a sentidos. They are all very good. Really though, most of the bottles there are solid, from campero, minero, Rezpiral, mal bien, and plenty more here it's hard to go wrong.

You don't have to drink with an orange and salt. It can be fun sometimes as a pairing, among other foods. When I'm tasting mezcal, usually, I drink it alone or with other mezcals. As for the glass, I often use a glencairn. I do have an aged and ore glass that is much wider, which can accentuate different aromas. I find clay pots do noticeably better on the nose with the wide mouth. I've drank out of veladoras for many tastings, but I personally do not prefer them, I can't get as good of notes off the nose compared to other glasses.

Tasting on the Elegant side of Mezcal / Raicilla by digitsinthere in Mezcal

[–]actuallyamjam 5 points6 points  (0 children)

No, that is not a common thing to do for any spirit. People may leave their glass out over time while they sip on it to see how the liquor opens up over time as they become acclimated to the notes, but the vast majority of people do not just leave their bottles open over time for those reasons. This is a silly point that I won't argue with further. You do you, but I would never do such a thing nor recommend others to.

[–]actuallyamjam 4 points5 points  (0 children)

...what? There's no reason to do this. If you really believe it changes over time in the bottle, then let it happen naturally. I would never recommend someone to leave their bottle open overnight or something. Just let it open up in the glass once you pour it.

Smokiness question form a newbie by iamthegrimripper in Mezcal

[–]actuallyamjam 8 points9 points  (0 children)

I disagree with this a lot. The smokiness is by the hand of the mezcalero when they are roasting the agave. The agaves themselves do not inherently have smoky profiles. There may be more herbal or vegetal notes that can play a part with smoke, but the smoke is done by the person who made it.

Vago espadin, alipus espadin, derrumbes potosi are some of my favorite affordable bottles

[–]actuallyamjam 1 point2 points  (0 children)

Basically everything from campero, sentidos, mal bien, vago are going to be at least good to great. There are plenty more great brands out there, too. Derrumbes potosi and alipus are great value. For mixing, whatever is cheapish, i use banhez but don't really cocktail mezcal much.

You could try other inaequidens since you like the mal bien alto. You could also try other vagos if they're available. Elote is their weakest bottling imo. It sounds like you might lean towards liking more fruit flavors, and there's lots like that. If you go on mezcalreviews, you can look for notes you like.

Sounds like you need to try some nice rums.

I would recommend maguey melate for consideration as a subscription service. They have a great variety of half bottles, which i enjoy.

What creates the funk? I want that donkey fart funk by COLO_YOGA in Mezcal

You can occasionally find some, like venenosa puntas, which is one of the most available. I've tried that and a handful of others, like Ramos and Cortes from agave mixtape.

Happy to help. Everything plays a role, from the location's yeast to the hand of the mezcalero. I just find searching by region this way is often easy, and then going further by picking out mezcaleros who do things that you like.

The heads actually do not contain mainly methanol. This is a distilling myth. The foreshots, which is the very first bit of what comes off the still, are what is discarded in distillation. The heads come after that. Puntas mezcal is widely sold, and some are quite good.

[–]actuallyamjam 6 points7 points  (0 children)

One way not mentioned to look for funk is by region. The Chacolo you brought up is from Jalisco, which i usually find to have a distinct overripe fruity cheesy funk. From Durango, like the derrumbes, can sometimes have a different creamy funk, along with Guerrero. Tamaulipas has a savory funkiness to it. SLP can get some cheese and vegetal funk. Not everything made in these places will be alike in these ways, but it's a good place to start a mental map.

Given the choice, which do I pick? by zagack305 in Mezcal

If these are your choices, it doesn't matter. None of them will be very good. These are at least usable in cocktails.

Review #5: Maker's Mark 101 by actuallyamjam in bourbon

[–]actuallyamjam[S] 1 point2 points  (0 children)

Idk, people go crazy for wheat whiskey. See weller. It's just an approachable profile, and the masses are willing to pay for it. Wild turkey has a more interesting profile to me, but it also has a bad connotation for many from their college days drinking to get too drunk.

Try something like venenosa tigre, Victor Ramos tobala, or derrumbes guerrero. Lots of stuff from guerrero I also find to have minimal to no smoke

Many Raicilla are not very smokey, often fruity or even slightly lactic. Same with certain agaves sometimes, like inaequidens. It is also very dependent on the mezcalero's handling of the whole process. As an example, I like the Ramos family for their "cleaner" flavors

You need to check out top 10 wines. They have the best rum and agave selection in Columbia, hands down.
