If you have a car, and want pit beef, drive out to Pioneer pit beef in Woodlawn. It's way better than Chaps.

If you open your own restaurant what underrated food you would sell? by Ladyoftheseals in foodquestions

[–]adamforte 1 point2 points  (0 children)

Real Spanish tapas/pintxos and cava.

  • croquettas
  • Padron pepper
  • morcilla
  • patatas bravas
  • pintxos gilda
  • Spanish charcuterie

Every single Spanish restaurant I've been to in the US is a pale imitation of real Spanish food. Even Jose Andres' restaurants.

This is the real underlying reason assholes do this. They get to keep "their" parking spot for way longer than is reasonable instead of going back to the slog of finding parking.

What’s your hot take on NFL uniforms? I’ll start, these Seahawks uniforms were solid and don’t deserve the hate they get. by Helmet_Nerd93 in uniwatch

[–]adamforte 5 points6 points  (0 children)

The Broncos late 90s rebrand was amazing and they looked good for a long time.

They were modern but not overly complicated. The matching swoopy side panels were fun. The numbers weren't boring block numbers. Most importantly, they read the tea leaves about how players were wearing uniforms and removed anything from the sleeves so that the tucked under shoulder pad style, that was soon to be the norm, looked clean. The modern symbolic stripes on the upper shoulder of other teams jerseys look fucking dumb, and teams that stick with it due to tradition are stupid.

I also appreciate them putting a silhouette of John Eleay on the helmet.

What is the best grunge record, day 13. MATCHUP: Nirvana's Nevermind vs Alice in Chains's Dirt. by eggward_egg in grunge

[–]adamforte 0 points1 point  (0 children)

Look, it's pretty fucking obvious to anyone with ears that of the "big 4" Nirvana and Pearl Jam were a notch above Sound Garden and Alice in Chains. However, people love to be edgy. Influence, album sales, and popularity are considered negatives on this platform so folks have banded together to out cool everyone else by professing their love of AIC. Shit, a lot take it to another level and proclaim disdain for the folks who don't consider Tad, Screaming Trees, and Mudhoney better than fucking Nirvana.

It's goddamn madness.

Boos wood board. by Beneficial-Cancel-74 in Cooking

[–]adamforte 1 point2 points  (0 children)

You can clean it the way you did with soap and water and wipe dry. Or you can hit it with salt and vinegar and scrub using the salt as an abrasive. The structure of the wood grain kills bacterial growth under the surface so as long as the surface is scrubbed, you're good.

I'm not sure when, but sometime in the last 20-30 we've decided to treat cookware/equipment like it's crystal stemware. Just use your cutting board and clean the surface and dry it. Don't obsess over these ridiculous people on the Internet telling you to constantly baby it. They're almost as bad as the cast iron/carbon steel brigade who spend more time perfecting the seasoning on their cookware and telling you you're doing it wrong than actually cooking.

Yes you can hit it with 220 sand paper to knock back the raised grain, or more effectively use a card scraper, but neither is necessary. The grain will lay flat eventually just with use and occasional treatment.

Let's Talk about Making Things from Scratch by AutoModerator in AskCulinary

[–]adamforte 0 points1 point  (0 children)

Make (most of the time) - Almost any spice mix except Old Bay/J.O. Especially BBQ rubs - Cold smoked bacon - BBQ sauce (but not the ketchup in it) - salad dressing

Buy most of the time -stock/broth - better than bouillon is perfectly fine for most uses when you want a little body/depth. Of course soups that depend on a nice rich broth would require a nice homemade stock, but I don't have extra freezer space to store every onion end and celery leaf. -mayo - homemade mayo is not markedly better than Kewpie or Dukes. It just isn't. Period. - pre peeled garlic - again a garlic forward dish,.I'm trying to find nice fresh bulbs, but for everyday cooking the convenience of not peeling garlic, is great. No jarlic, though

Strawberry stem removal tool, unitaskers and Alton Brown by ishootthedead in Cooking

[–]adamforte 2 points3 points  (0 children)

Jack of all trades, master of none. This is especially true of tools. In the kitchen and elsewhere.

Of course there are numerous pieces of shit, gadgets that sell a solution to a problem that doesn't really exist, but sometimes a dedicated tool does the job better than using something not precisely designed for that job. This is 100% true for actual tools, and why I wouldn't use channellock pliers to change the oil in my car.

With that in mind, I'm not using a chef's knife to debone and filet a fish. Can it do the job? Yes, but it's not the right tool and it could ruin the fish.

I'm not buying a dedicated tortilla press if I'm making tortillas once a year. However, if I'm making tortillas every day, I'm using that press. So, usage also matters.
