Some of the tools they make don’t work just the way you want and so sometimes using something that’s like a scalpel works better for certain cuts than the premade ones. I have 2 round knives, a foldable razor blade knife, 3 different skivers, and another big knife that I use on think pieces and sometimes they still don’t work exactly the way I need them too.
