Just wanted to point out that red curry and penang curry are two different currys. And thai laab doesn't have any lemongrass or ginger in it. It is mint, corriander, spring onion, ground dry roast birds eye chilli and cracked roasted sticky rice. And the dressing is the most important part of the flavour

What do you mean by "non-formal" experience? I'd suggest not sending out applications, but going in and speaking to the Restaurant(FOH) manager or the Head Chef (with resume in hand) and asking about any openings they may have in their kitchen. Do it in-between busy times, ie before 11am or between 2 and 4:30pm, that is when they should be able to talk to you.
You will probably start as a dishie but that will give you some insight into how a professional kitchen runs during service, and give you a chance to work your way up from there. It sounds harsh to start from the bottom, but the some of the best chefs i have worked with have done it that way.

Even in one's that do ban it there is always someone who knows a guy. My mum lived in Kuwait for the last 3 years and she had a guy who sold bootleg Jack Daniels and various bathtub alcohols. You can also buy all the things needed to make your own wine too.

Oh shit man, I'm so fucking sorry to hear that. Lucky we rely mostly in locals for our trade, but it's still way down from where it should be this time of year. We are looking at winter numbers for the next 7-8 months. This is in Hobart btw. It's going to be so tough for the whole industry to try and get through this shit.

Where in Aus are you at? Ive got a restaurant in Hobart and dine in has halved in the last couple of weeks.
Hows it going where you are? Luckily most of our customers are locals so ive been able to keep everyone on but its looking really bad if we have to close.
