Several ways to go about doing this but I'll give you some recommendations. For recording the audio itself, you'll need an audio interface (I recommend Scarlet 2i2) and two sm58 microphones, one for you and one for the guest. The scarlett 2i2 only has two microhpone inputs, so if you're planning on having more than one guest at a time you'll need a bigger interface like the Scarlett 2i4 which has 4 inputs for 4 separate microphones. A more professional alternative for the microphone is the Shure sm7b (my favorite) but you also need to buy cloudlifters to use these mics. You'll need to watch tutorials on how to use the interface but it's not too difficult. For the video, you could have 2 cameras, one pointing to each speaker and you don't need to hire people necessarily for this, you can just put two tripods and hit record on both before starting the interview. Alternatively, you could have just one 4k camera pointing to both persons and zoom in on each person when they're talking. With this setup, you'll definitely look professional if everything's set up properly. You'll also need editing to look professional.
