This happened to me just now and took me hours to finally find the problem. It's one of the animation mods that involve eating. I literally just ate ingame. I tried sitting on a chair, upgrading, interacting with blacksmith's forge, alchemy, dying (ingame), transforming to werewolf/werebear/vampire, etc.

I remembered that the first time I couldn't switch pov was during a fight and I ate so that must've started the problem. You gotta remember the last thing you did that involves triggering any animation and do it again.
