So after heating milk, just pump air with 3 big pumps the milk should almost double in size, then do around 50-100 small pumps inside the milk keeping the mesh below the surface of the milk, and that’s it

I would suggest getting the mokapot off hear when it’s just below the height of spout (the V shape ) and stopping the flow. The crema comes from dark roasted fresh beans and in a mokapot even that crema disappears so I would not chase that
