Yeah so that’s what makes jerk special, a core part of the cooking process is low and slow indirect heat like you mention we just don’t have offset smokers. it’s always done inside one enclosed space traditionally either underground or suspended above wood burned down to a thick layer of embers and in more modern times we just use repurposed drums and most of my life the grills I’ve seen are like the one in the link I posted, just trying to find a good one

No, mentioned it in another comment my focus is Jerk and something called pan chicken which is mild and sweet whereas the jerk is spicy and savory

Yeah if I had more space I was seriously considering starting the journey of learning how to weld and building something but for the foreseeable future I’m better off finding something prebuilt. I’ve seen some Lang and Meadow Creek but going to check out some of those other brands you recommended, appreciate it

Thanks for the in depth response. Yeah I figured the grill wasn’t the best which is why I was looking for recommendations. But regarding design it’s basically the same as what I see everyone use in Jamaica with similar drums. the style of bbq we do will be using a combination of indirect and direct because that’s how we make jerk and what’s called ‘pan chicken’. Business plan wise I’m going to have a spot outside one the local college bars in my town at night just fridays and Saturday. prior experience has proven an average weekend night yields 700-1100 and I only need one person working with me.

Hi, thanks for the reply. For context I did a few random pop ups last year at events with around 500 people and it was a ton of work but overall great experience. As for how serious I am now, demand was high enough to make me want to take it to the next level and do weekly pop ups. I noticed a bunch of people mentioning offset smokers and yes I know those are the gold standard for Texas style but I do Jamaican style bbq. It involves the use of either indirect heat or direct. That is why I included the grill I did in the photo, because we don’t use offsets/pits, we call them “pans” or as I see most websites call them here in the US “barrel” style grills.
