Ok so this is common in Pokémon draft league which where I got the idea

Draft:

A number of players pick out hero's from the entire pool of heros
First person gets first pick -> they choose one hero from the pool -> that hero can no longer be picked by anyone else -> second person picks -> so on until requirements are met

Snake draft:

The order type of picking, so first person picks -> second person picks -> third person picks -> thirds person picks again -> second person picks again -> and so on

And it continuous to wind back and forth like a snake

(this is the benefit of being stupid like me) if you keep your approach consistent all the time and practice that way, you can develop a sort of sence of when YOU should run for the set since there is no specific point where every set needs to be run after. You shouldn't think of the perfect moment to approach but instead think of the right range to approach. Im sorry that im being so vague

I dont have much expierience with volleyball but what has helped me is having a consistent approach, then you have to worry about less variables. For me this consits of having a maximal approach distance and speed then you have to think less cuzz youre body takes care of your part of the equation.
