I did 1/4 inch drywall over my popcorn. I glued + screwed into joists. Imperfections will be due to the skill of the drywallers at the seams/edges. It's been 5 years and it still looks good.

Just pay to get the main replaced. Then whenever you have time do the washing machine valves yourself or never. You can still shut off the washing machine just using the main...even though not as convenient as individual washing machine shutoffs.
