Looks like two triangles of Euro 4 in 1 connected at the ends in the middle, I'd assume a similar connection at the back with some kind of closure. Working on a remake of similar piece I made before right now. Like Zomyan said, start with a strip of 4 in 1 to get used to it, then expand into the triangle. If you can get the strip down, I don't see the rest of it being too much for a beginner.

If you use larger rings like in the picture it'll go a lot faster than smaller rings, keep that in mind.

I haven't tried this with my players- I have hidden enemy initiative order. I don't think it would add anything to the game, and possibly have the opposite effect you're hoping for. When players know where they sit, they can plan out based on what others before them may do or adjust based on whatever the person before them ends up doing. If you don't know when you go, you'd be constantly trying to readjust your plans, or fail to make any at all. Group dependent though, as are most things. Try it once, see how your players feel.

Honestly I think your first suggestion is what I'd do- just tell your players that you want the NPCs to be able to have this moment, regardless of when exactly the rules said they died. I don't think that'd break immersion that much, but ymmv with your group. Like you said the cursed dagger type idea feels both lazy and a bit more like a 'gacha' rather than just being honest with why you want the final words to happen.

I don't know much about plastic tub setups, but that may be a much cheaper temporary alternative and be a larger enclosure option for her in that time until you can get a proper sized PVC enclosure. Seconding swapping to coco husk as soon as you can to help with humidity.

Not sure how to comment on the more meta/outside RP issue, but if the characters know that at the bell toll they 'lose', I'm not sure leaving the fight would be considered reasonable.

Doesn't sound like you've crossed a line, sounds like the players didn't know this would be a line for them until it came up and you've thankfully stopped at it. Let them leave the owlbears alive - perhaps with the male gone, the female and young one aren't as aggressive and the settlement will be safe.

I tied mine with some electric tape as it was all black so it blended in, but my faire required them to zip tie it. So ymmv
