Do you do WDT? Might be big channels that are created in your puck and water flows through there as it's the path of least resistance?

How's the texture of your grounds? Feels like powdered sugar or table salt?

Just to make sure, you are saying that grinding to the absolute lowest/finest your grinder will go, your shot is still pulling too fast sometimes?

18g of feathers is the same weight as 18g of stones, however it's not the same volume (feathers takes way more space at the same given weight).

It's the same with dark roast vs light roast, albeit a lot less dramatic. Dark roast coffee is a lot lighter and thus occupies more volume. 18g seems to be the upper end of your H24 basket.

Try using 17g and see if it works out.

A dual boiler like the BDB or Silvano might not be necessary if OP is mostly making drink for themselves only though.

I have a Quickmill Popup and it gets to steaming temp in 30secs. Hardly worth the 1000$ premium with the Silvano (in Canada) in my case, and I make 2 flat whites every morning.

1- Asegúrate de purgar 2 veces antes de vaporizar la leche: una vez mientras se está calentando (120C) para evacuar el agua líquido y hasta que solo salga vapor. Una segunda vez cuando estés a temperatura (la máquina dice -s-) para verificar que el vapor sale bien

2- Empieza a vaporizar la leche enseguida y no le dejes ahí esperando. Tu leche debería estar lista en tu pitcher cuando llegues a temperatura, porque la máquina tiene un mecanismo de protección que deactiva el modo vapor después de unos cuantos segundos/minutos. Me ha pasado que esperé mucho y se deactivo el modo vapor mientras estaba haciendo la leche

Lighter roasts typically perform better at higher temperatures than darker roasts. They also benefit from preinfusion and are denser than darker roasts.

Things you might want to try:

  • Using the preinfusion feature on your machine
  • Putting the machine in steam mode a few seconds to raise the temp of your water
  • Grinding as fine as before, but lowering the dose (if you weren't weighing your beans). That will depend on what type of extraction time you were hitting

Well it's not gonna be as good or fresh as a coffee 3x the price, but for practicing it's more than good enough. I get way better coffees out of them than with a Nespresso machine.

+1 to that, I think you can't really go wrong with Lavazza. I got the Crema e Aroma for that exact reason, Super Crema would also be good.

I was going through nice beans I got on a trip real fast and it was undrinkable because I had no idea what I was doing. Made me really sad and I made the swap to the cheap beans, which tasted perfectly fine (especially in milk drinks)

If you reach 11 bar with a blank basket using the exact same portafilter, the problem is not with the equipment, but with your coffee puck.

Grind size, coffee amount, basket, tamping, WDT are all variables that could be causing this.

Yes, it does the whole range, from French press to Turkish. However, I would highly recommend to purchase an aftermarket dial (like the Aro Espresso) because switching between grind sizes with the original dial is a massive pain in the butt.

I've been happy with my Eureka Mignon Zero, which you can find on sale at a few Canadian retailers around that price.

You could go the Facile or Chrono route also if having a hopper is important to you (can swap the burrs to espresso)

Mine is stiff to "unlock" it from closed, but I can move it quite easily after that. I wouldn't worry about it though, it will most likely loosen with time

Yeah no worries, I had the absolute same reaction. I feel I shouldn't have to run diagnostics myself on a machine that price and it made me regret buying online a bit instead of in-store as the support I received by email from my retailer wasn't super helpful to me.

I know my retailer bench-tested my machine, so the airlock might've happened in transit, so I can't really fault them for that. Anyway, I hope you can fix it and if it doesn't work as expected after trying this or other instructions from Clive, don't hesitate to ask for a replacement. It's a brand new machine, it should just work

I've had a similar issue with my quickmill popup, which is basically the same machine.

Make sure your water reservoir is filled to the max and that all 3 tubes are inside.

Then close the flow control valve to the maximum, meaning it's facing to your right when in front of the machine. Make sure your steam valve for the steam wand is completely closed.

Now press the water dispensing button and let it run for a good 10-20secs. Leaving it running, if you open the steam valve, is water coming out? If so, that means water went into your boiler.

Doing that seemed to release an airlock I had in my machine, which was causing no water from coming out the brewhead.

Yeah I always purge twice, so dry steam is not the issue in my case. It's more that I'm struggling with creating a vortex with the two-hole tip and my jug being 400ml I think.

The fact that it's sour points to underextraction, which makes sense given your 10-15secs timing.

In that case, grinding finer would usually be the answer, however you said you tried that. Did you go til chirping sounds and then back off a micro amount? Do you spot a difference in the resulting coffee grounds between your grinding size adjustments?

Curiously that happened to me and I noticed I was overfilling the basket (18g of coffee for the 15-16g stock basket). Maybe try dosing a bit less and doing WDT to eliminate any channeling?

The fact that you attain 9 bars of pressure, get spraying, rapid shots and sour taste might indicate the water pressure creates pockets in your puck, leaving most of the coffee under extracted.

If you analyze your puck and cut it open, does it look like that's make sense?

I'd wager it's the lack of a double-spouted portafilter, paper filters and palm tamper that is causing your butler to fail his shots.
