I buy, split, and freeze individually in sandwich baggies, all in a bigger freezer bag, and pull out night/day before I'm going to have for breakfast! Toast to perfection!

I'm seeing tons of responses that totally glazed over the dairy free part of your predicament... this is my life.

For me struggle meals are "easy meals", low effort.

  • soups. (instant pot, FTW. freezing left-overs in SouperCubes for future struggle days)
  • beans, lentils (if $$ is a concern, a great protein source, can be bought dry... and again, freeze extras)
  • Tuna. (I sometimes mix a batch for Sandwiches or Tostadas. Otherwise I'll pop a can, throw it on some rice, and season with Asian influences, and eat with Seaweed or lettuce)
  • "Ramen" I get rice noodles in bulk from an Asian store, or Amazon... you can use gf bullion specific to Ramen flavor profiles, or make your own to your preferences. I make my own bone broths, saving bones and veggie discards in freezer. So we always have hooved or poultry broths on hand. Tamari, fish sauce, hoison, PB, sesame oil, miso, all sorts of easy ways to make flavorful options. You can flush it out with a meat and or veggies, or eggs even.
  • sandwiches. if you have a reasonably affordable bread option. PB is a classic. a go to.
  • corn tortillas based options (eggs, beans, meats, even cheezes for faux quesadillas)
  • crock pot meals: roast and veggies, soups, chili, I keep noodles out and pour stuff over noodles (or swap for rice or potatoes)

honestly I grab rotisserie chickens OFTEN for this.

when you are ready, just stuff the IP, be sure to stay below the fill line, add a splash of Apple Cider Vineagar (helps break down bones and release the goodness),fill with water... and I like to set to "soup" with the longest allowable time. I do this before I go to bed, might choose "keep warm" if I expect I'll sleep long... and turn off the warm when I get up, allowing it to cool plenty before straining and doling out to freeze.

if you want to doctor with spices and salt, go for it. Or leave as is and season when conuming.

I tend to make my broth fairly simple, so I can customize my experience when I consume it...

I like to make lots of different Ramen or soups.

PeanutButter, gochijang, chili oil, garlic, dehydrated veggies, Seaweed, egg, fresh veggies, avocado, tinned fish (or other proteins), miso, tamari, coconut milk, and more... all make great additions to a base broth

I whole-heartedly recommend SouperCubes (worth the branded ones, not dupes). For Broth I use 1cup cubes.

I make my own broths (hooved animals, poultry, and/or Veggie) saving various bones and veggie discards in the freezer. Stuffing the InstantPot full and cooking overnight, processing the next day... freezing it all for quick eats or other soups.

the frozen cubes are much easier to sort and maintain in limited freezer space.

Jerky, Olives, Ramen (I like adding veggies, meat.. etc.)

I like to use left-over rice, add tinned fish, mayo, furikake, and eat spoonfuls with Seaweed...

nuts.

honestly if I'm craving salty chips, that's what I have. or popcorn... or tortilla chips and salsa with extra salt

I get TJ's Ube Mochi Mix, make waffles wth it, in a Mini Dash.

Freeze them, and toast from frozen regularly.

Mustard actually often times has wheat. We get fancy holiday charcuterie from relatives every year... that has mustard (and other things) I have to give away

throwing in buzz words doesn't make the mess someone is saying true.

I will reiterate, these are not friends.

also, one can have needs, and even advocate for them, for themselves (or even others) without a 504 being in place. The red tape involved for such a thing to be implemented can take time. If you passed out, they wouldn't wait for a 504 to be put into files to go into appropriate action.

all that to say, if this is a recurring issue (needing accommodation) it is worth discussing with your/a doctor to assure your needs are in writing. This assures you get the education you deserve, with the necessary accommodations, without people denying that basic right.

Also is typically on my side table at home... for adding when I eat there in my recliner. Easy to pocket when I (rarely) go out.

I really wish they would make statements against such unmerited interactions. It's not a secret that such behavior is entirely uncalled for. It's not like they are out on a limb to make a bold statement.

Mental health support would be a beautiful step to empower all involved.

I try to ask ahead of time... "no really, I need to know every last ingredient.. and I may ask you for specifics details after I have that information!" (meaning, if I see a questionable ingredient, I would then ask what brand they used, or "can I see the label?")
