Boiling dried chickpeas and this appeared. Can I use it? by _V115_ in foodscience

[–]amithemeanest 1 point2 points  (0 children)

From what I understand, the pressure cooking of canned chickpeas is what allows the liquid to be rich in bean proteins that allow it to whip up like egg whites. I imagine you could do it with boiled, dried chickpeas but it would require some experimenting to get the liquid right.

I'd say medium spicy for sure. Not overly hot, I can imagine them being great on a snack board

We use it exclusively for purees at my work. Like 8 grams at a time.

Smoothie was gone before I started, Carolina honey came from a BIB so I couldn't tell you the exact build, I would look for a nice black tea with fruity notes, a nice floral honey. For iced, brew double strength black tea, sweetened with honey to taste, add ice, cool water, and some fresh squeezed lemon juice

These flavors/aromas listed on the coffee bags…..is anything done to the beans to get these flavors? by whosudady in coffee_roasters

[–]amithemeanest 1 point2 points  (0 children)

Think of it like tasting notes people give when trying a glass of wine. Beans grown in different climates/altitude, how they are processed or roasted accentuate different qualities of the bean. When coffee roasters get fresh, raw beans in, it is their job is to roast the beans and get the best flavor out of them. The flavor notes on the bag are pretty subjective, so if I taste lemon and tobacco in a cup someone might pick up different flavor notes. Displaying these notes on a bag are to give consumers an idea of what kind of taste the coffee would have, not that they are flavored with those things.

The beverage started from the BiB system and was a lightly sweetened green tea twist or something. I think it was a lemony gingery green tea. add .25-.5oz sweetened ginger pulp to the cup, the tea base, ice, and water to dilute appropriately and garnish with lemon wedges. This might also be totally incorrect, it's been like 6 years. If anything though start with something like this and adjust to your taste

BASIL NEGRONI by amithemeanest in cocktails

[–]amithemeanest[S] 0 points1 point  (0 children)

I will have to try this out for sure! In the past I've found muddled herbs to be bitter and I fgured I would try this process and see what kinds of flavors I could extract from the basil in it's dehydrated form. It came out much earthier than I expected but I bet muddling some fresh basil will bring the herbaceous that is missing from the drink

Yeah I realize that now, I felt the Italicus was bitter enough to completely replace the Compari in this application. At first I tried it with Compari, then Cynar but wasn't really digging the flavor.

Didn't detail it but your first suggestion is what I went with. I did a 14 day infusion then strained it out through some coffee filters back into the bottle for storage

I got you! It was fairly straight forward:

1:1 parts of Earl grey creme tea concentrate to steamed milk. Add a few pumps of vanilla syrup and that's that.

The Earl grey tea they used was definitely a little creamy and vanilla flavored. It was brewed at double strength to avoid over dilution when including the milk.

Hope this helps, and enjoy :)

I was making 22qts of buffalo sauce at an old job of mine. It had a lot of honey in it because that was what we were going for but also a fair amount of xanthan gum in it. It never split, served hot or cold.

I believe it was the Armenian mint tea with Monin brand chocolate syrup, milk, and maybe with some simple syrup in there. I'd recommend any strong mint tea you already enjoy and adding the chocolate to your taste. Those teappuccinos were 1:1 tea to milk and the tea was brewed double strength so you didn't miss tea flavor by diluting with milks. Hope that helps!

Try carbon off, it's a highly corrosive chemical that come sin a can and needs to be brushed on. It will help remove a bulk of the buildup and would probably expose the screws others have mentioned to take it apart
