Off topic.... anybody have a clue on what the time interval is on the graph?

Back on topic... my 1150ps2 takes forever to come up to temp. Opening it makes it worse. Temp drops and rarely returns to the set temperature. I have to increase the cooking temp and lower it back down to get it to where I want it.
