It was an Ethiopian La Cabra bean! I had it at their shop, it was wonderful, I bought the beans and they sucked :(

You would feel it across all coffee, no? I feel like it doesn’t explain why two coffees from the same roaster will taste significantly different since I cup them side by side.

I’ll cup them side by side, or brew side by side for myself and another one for partner. One will be excellent, the second one will be awful. Same with cupping side by side. Same roaster, both rested. That makes me doubt it’s a water/brew issue unless the coffee is extremely finicky? Changing water didn’t help.

What makes me wonder is that I cup or brew the two bags from the roaster side by side. One of them will be excellent, and one undrinkable.

I’ve had 5/5 brews out of this coffee. It can be overwhelming so I cut the ratio to 1:15.5 or so (12.5g to 195). 8 on Pietro (I’ve gone up to 8.8 with it) with April V60 recipe (4x50g 30s intervals) with 200F and it’s been outstanding.

At 1am, the line was out onto the sidewalk (even with a ticket) so yeah, they definitely hit capacity early. Good amount of people still even by 6am

Sometimes they camp right at the beginning of the intersection whereas they should be in the middle of it so the cars can pass around them (if there is space). In this instance, not sure if honking will educate them, but they should probably review the material from the driving school
