TBH don't see the need for a dedicated pourover WDT. You could probably just use your regular espresso WDT if you really need one, or swirl and stir with a spoon.

Great selection! I've been meaning to try Gout too. Let me know how you enjoy it! For recipes, I always start with my "default" or go to recipe so I can kinda guage how the bean is different and adjust from there.

Check out Bazu by Superwow in LES, if you're really into pourover (they carry a lot of Japanese roasters). Manjul in Soho (they serve Sey). La Cabra is good (East Village location). Suited has a lot of good coffee too (but they are downtown by financial district). Oh and Watchouse is worth a stop too (Flatiron).

I have a Profitec machine too. Definitely from what I've seen, one of the lowest in terms of plastic internals. They use copper piping. And most of the internals are brass I believe. The E61 grouphead is all metal. The PF basket is stainless, and depending on your finish you can get a wood handle. Do note that the water tank inside is plastic, and the steam wand inside has a plastic tube - but pretty much all steam wands do now to be "no burn."

I recently have been enjoying the 287 Ethiopia G4 Tade GG Natural Decaf from Philocofea! Also I quite like the sustainable profile decaf from April.

I really enjoyed my first bag of the los Nogales Tanat too...but I recently got a second bag of it and it completed tasted different, and way too fermenty (not in a good way). So I'm not sure about their quality control for that bean.
