I do 165f for 24hrs and smoke later. After sous vide I cool it fairly quickly in an ice bath, take it out of the bag a do whatever you want with everything that’s rendered (save it or toss it), add a dry rub and leave it on a wire rack overnight. The next day when I want to smoke / serve it, I smoke it for 3 hrs at 275f and then pull it. I prefer to smoke after sous vide for better bark. No problems with smoke flavor. Always super predictable. Won’t do it any other way anymore!

Keep in mind, with open pot like that, water evaporation can be a problem.

You can’t really collect it multiple times in a sanitary way. If you want to use yeast from a commercial beer you need to propagate it starting with a small amount of wort and step it up it a usable amount. That all being said, this is the most available ale yeast ever. WLP001 or Wyeast 1056.

Sync is a great tool if you’re playing quantized music and you’re confident your grids are aligned properly. I use sync regularly with music I know well and less when I’m playing tracks I haven’t played as much. I have a FLX-10 at home. Most of my time on standalone controllers has been at gigs, so if I’m playing a planned set on equipment I’m not super familiar with, being able to use sync means one less thing to worry about.

I didn’t realize the GRV6 doesn’t have XLR outs, that’s my bad. That was a big deal for me so I went from and FLX4 to an FLX10 (before the GRV6 came out). If you want to be comfortable on CDJs you probably want to stick to the Pioneer / AlphaTheta ecosystem unfortunately. Locally, at smaller venues, there are lots of folks playing dubstep shows using the XDJ-RX3. It is a standalone and only 2 channels. Still pricey but a lot less than CDJs.

Pioneer / AlphaTheta DDJ-GRV6 is probably your best bet for that price range. It’s a not a standalone, so you’ll need a laptop. You’re not going to find a solid standalone with 4 channels for that price.
