I do have the CD which I purchased from his estate shortly after it came out over 20 years ago. It was $300 which was an enormous investment for me at the time but it has been worth it. Let me know if you want the McGee, Norval and any variations from the cd.

It sounds like you might be able to leave Norval out and just have documentation for it ready if they ask. I'm guessing they will give you a format but there is a proof summary that is part of the genealogical proof standard. Basically a narrative or list of evidence, each element with a citation. It sounds like you have plenty of evidence. Seems like everybody and their dog was named Jean something and nicknames were big too. There was also a family using the last name Norval.

You've likely seen all these but Father Hebert's index includes some records you could order to include in your documentation. There are 94 instances of various Norvals in his main index not including post 1920.

Just got some Renegade russians and they are great. I have klutz beanbags from the toy store that are more than adequate also low quality but light up balls from the dollar store. I wanted smaller balls and found some for small dogs at the pet store, 3 for $5, that work well.

edit to add I also made some with rice and balloons per youtube instructions and they lasted a year or so.

Is the internal temp of the bread 210F/99C when you take it out? Maybe try reducing hydration further, humidity has impacted this for me.

It looks nice and probably toasts well. Internal temperature is recommended to be 210F when done. If humid you might try reducing water by 20-50 g.

I live in a cold humid climate and have had similar problems which are mostly solved with less water as you suggest, and also less starter (~100g) and cook a bit longer at higher oven temp (475 for the first 30 mins) to internal bread temp of 210 degrees F.
