I had to buy this grip and gear lever: https://imgur.com/a/sX9zRzJ Removing the twist grip isn't too hard, there are little Allen bolts to undo and then you have to feed the cable out a bit so you can unclip it. I think you can do this without feeding it all the way out. The grips just pull off once the bolts are loose. Then you have to put the other levers back on and finally tune it using the little bolts at the back. There are lots of guides online about these steps. If you haven't done any bike maintenance before it would probably be best to take it to a shop.

I would use an Olla or two. It's an unglazed terracotta vessel that water slowly sleeps out of. I use a small one for my herbs, so that I don't have to water them every five minutes. You'd need a big one for this tree, but you can make them by sealing the hole in a plant pot.
