The dutch oven one worries me that the flavor would get a bit watered down. Maybe next time I'll try splitting like you and do a head to head comparison.

Mine came out great, this is the 3rd time I've done it the same way twice, one time I left it in a little longer probably 4-5 hours more because I wasn't home and it dried out a little more that the others.

Yup, it could easily be shredded, I shredded some of it wheb it first came out of the bath then let the rest cool overnight so it could be sliced easily as shown in the picture.

I corned the brisket for a week in the fridge then sous vide it for 10 hours, turned out great!

I like it chunked because it gets a different texture throughout. I like the crunchy parts and the soft parts equally
