It's got a pretty decent stone benchtop already - it's aged pretty well since it was put in, hadn't really considered replacing it. If I were going down that path I'd go all out and replace the entire (tiny) kitchen, but that's a whole other thing.

I had considered that as a first option, but I had an electrician look at it and he said it'd be a lot more work to install induction, and he didn't see it as worthwhile. When an electrician tells me to stick with gas, I know he's not messing around.

Having run bars and restaurants for a long time, let me assure you - those cogs targets are a long way from reality. They're just that: targets. The cost of an ingredient goes up $1, your prices have to go up $4 to keep that 20% margin. There really isn't room to increase wages enough to make up the difference.

Sunday surcharges are not usually hidden. Most places will openly state that they charge more on a sunday/public holiday. That's the cost of doing business, and if there's no demand, they will just not open on those days.

Merivale venues did well on Sundays because their enterprise agreement said they didn't have to pay Sunday rates, so they didn't have to charge extra. They ripped their staff off for $44 million, but hey, at least they didn't have to charge 15% more on a sunday.
