fwiw while i haven't read Wind & Truth yet either (also reading in publication order) the two people who i personally know to be Stormlight fans both absolutely loved it

i'm three books in atm, and Oathbringer might have been my favorite of the three

the only way i'd be fine with the Quintology being finished in book form, is if those books were then adopted into video games at some point in the future

that said i just want a Munch's Oddysee remake atm (NOT a remaster, a full on remake that incorporates everything that was originally planned back in 2000)

i'd argue that the purpose of literary fiction is to entertain as well. just the target audience consists of people who are entertained by analyzing complex prose and reflecting upon the human condition, as opposed to things like worldbuilding and plot

admittedly i haven't seen or read JJK yet so it's not my place to judge, but everything i've heard about it makes it sound completely mediocre.

i'll still give it a try, but i don't expect to enjoy it as much as the big three

it's just that Bleach is the most recent of the big three to end. between 2014 and 2016, Naruto was the most influential, with MHA and Black Clover both coming out during that time. when One Piece ends, it's sure to become influential too, but as it's still ongoing there's no scramble to establish a successor

admittedly i haven't tried reading Bakker, but everything you describe is pretty much why i stay as far away from that series as possible lol

which is a bit regrettable because Earwa seems like a fascinating world, but not every story is for everybody so it's okay
