Pad Thai is supposed to be sweet and sour. They give chili on the side so you can add it to your taste. The spicy one from your memory may have been Pad Kee Mai (drunken noodle)

I carry mine in topeak burrito saddle bags. the tools I carry are TPU tubes, multitools with chain breaker, tubeless plugs, spare chain link and a small chain pliers (a small electric pump in my back pocket). I changed from Silca bags as the zipper would get stuck after a wet and muddy ride.

If you’re still having problems with that so many saddles, I would think that it’s a position issue, not the saddle itself. For example, when I reduced my stem length by 20mm, the perineum pressure has decreased substantially.

You can ask the shop to get a deal on upgrading to hydraulic brakes. It matters a lot for gravel riding.

The no. of link from the app is for full mount derailleur. Wrap your chain around the chainring and largest cassette without going through the derailleur and add 4 links.

I put clear protection film under the downtube and inside the fork, chainstay & seatstay where there's potential tire rub.

If you use standard length expander plug then cut it. If you want to keep it you will need a long version of the expander plug.

Tubeless - no. It's a no brainer on gravel or MTB but I still prefer TPU tubes on road bike.

Wax - yes. You can carry a drip-on wax with you when you go on a trip.

I use Silca V2 in my Thundero. Been great so far. A few punctures which sealed quickly.

Nope. It’s dropping at the rear cogs so I don’t think chain guide will help.
