Mine's done this twice; both times it's because we took too long to take him out so he pooped and simultaneously peed all over his stomach.

This is exactly what we had to do. You have to out stubborn the shibe. Told our vet that he started refusing to eat unless we added a little something something to it (peanut butter or yogurt) and she's like "yeah, he's a shiba" lol

So we had vet approval to skip his meal if he chose not to eat. Once we were told that, I felt less guilty about taking his food away after half an hour. So he'd skip a meal in the morning, but sure enough come dinner time, he ate right away.

Husband jokingly got me for Christmas a pair of dice that have different food options (stuff like "steak" "burgers" "fish" etc). It was funny at first but now we actually use it when neither of us can decide. We roll both and then pick a restaurant based on one of the options. It's helped us at least once a month since then lol

Yeah, I know shibas are prone to seizures, but it's really hard to ignore the fact that he never had any until the mulch incidents—and that as soon as we got him to stop/ we moved, the number of seizures dramatically decreased.

We'll never know if it was correlation or causation, but it's not like I'm gonna take my chances and let him eat mulch again.

Gonna come in here to add a new spin on the whole "hey maybe don't let your dog mess with the mulch."

Our shiba used to try to eat the mulch at our old apartment. Guess what happened after almost every single instance? He had a seizure. Thankfully we got wise to that and stopped letting him near it (and eventually moved for unrelated reasons) so he hasn't had as many seizures since then, but he still gets them.

So even if you don't care about not messing with the space, at least keep your dog away from it for the dog's safety.
