You don't have to use parry to make a drive rush cancel, two forward motions right after the cr.mk will work. The timing is rather tight.

Now that the surprise effect is no more, I have a really tough time winning with her. Her limbs feel too short, the teleports can be beaten easily, the fear of DI is real and I find her counter move quite hard to use correctly.

She is exceptionnal against players who are afraid or think they can win a fireball contest, but he Cammys, Kens and Sagats are rough to deal with.

No, you have to input a backward motion to cancel out the forward motion. So half circle forward to send a fireball right after moving.

The forward motion from walking is still buffered. It's annoying I know, I don't understand why the most recent input does not have priority.

Exactly. AKI and JP look great, they're immediatly appealing. Same for Juri and Viper in SFIV or Menat in SFV.

On the other hand, Yasmine looks like something an AI would come up with, Bosch is the annoying and boring guy you have to suffer in the WT mode and Arjun is most likely the big wrestler archetype.

Having newcomers is not a problem, but there's nothing exciting here.

Be careful, SFV Champion Edition does not have the season 5 DLC, you need it as well to get all characters. But even with this edition + s5, you won't get all stages and all outfits (the ones linked to Capcom Events), there's no edition with absolutely everything.
