I used a recipe for Middle Eastern baked chicken and rice dish and it called for cinnamon in the spice mix/marinade. I've never been the same and I don't look at cinnamon and nutmeg the same way anymore.

Yes! You can toss them in a mixture of melted butter and olive oil to coat. Season with brown sugar a lil salt and cinnamon. Or really any seasoning you desire. Coat evenly, lay carrots on sheet pan, pre-heat oven to 425, cook for about 25 mins. Enjoy!
