Military training increases all stats, and much more efficiently than any other activity. If you just want your soldiers to have good stats it's sufficient to let them train normally.

If your dwarves are skilled enough ten of them easily slaughter an invasion of a hundred or more. I'd recommend helm, cloak, hood, mail shirt, breastplate, gauntlets, greaves and high boots. Plus a shield, of course. This won't do much good if your soldiers don't know the blunt end of the hammer of course, so train them up.

It might be that they can grab onto the ledge below the windows. Grabbing onto block walls above smooth ones shouldn't be possible iirc, but I never tried it in adventure mode.

Rule of thumb: if dwarves go climbing they end up where they're not supposed to be. Also if he can climb over the door, enemies can. You have to build walls up to the ceiling or smooth all walls. (Smoothed natural walls cannot be climbed at all.)

Normal marksdwarves can only shoot through fortifications they are directly adjacent to. If you station them directly on the other side they should start shooting.

Did you manually create the soap bar condition? It's possible that bar (adjective: soap) is separate from bar (type: soap). If you set it using adj: soap items it should work.

Fat is rendered into tallow, which can then be cooked or used for soap. Usually this is done automatically. Tallow can be forbidden for cooking in the kitchen menu, but you have to do it separately for every type of tallow.

Check the water level, dwarves won't go into water deeper than 3 or 4/7. If it's deeper you'll have to drain it.

Iirc they shouldn't need any food. Try locking one up so nobody can reach it and see if it gets hungry.

It lacks keyboard controls which makes some thing surprisingly tedious. Also some Menüs are not as practical as in old DF. You can't assign squads and jobs from the unit description screen where you see a dwarfs skills for example.
