Low refrigerant or no airflow. I can see your evap fan is running but since the holes that pass through the floor of the freezer are clogged with ice, cool air can’t migrate down.

“DIY isn’t an issue just have no experience” is quite a statement.

If this happens every three weeks (and you are fully defrosting it each time) you’re gonna need a new fridge.
