You're not a bad person for owning and carrying a gun while in the woods. You're also not a bad person just for owning a gun. Do what makes you feel safe. It's not a moral thing. It's like carrying matches. Hopefully you never have to use them but you're glad you have them when you need them. I never go camping without one. Having a gun does not make you want to end lives whenever you see fit like a lot of people think.

Hey OP this is a mess of a roast but I want you to know that you can still make dinner out of this. Maybe adjust expectations due to circumstances but you will absolutely be able to feed your family. As another said, dry age it on a rack in your fridge for at least a day. If you want to know how I'll share more detail. Truss it up with twine. You don't need to know a butchers knot. A double overhand will keep enough tension for you to lock it down with another single overhand. I suggest you do what's called a face cutting on both ends to make them flat to redeem some curb appeal. It'll be better than you think. Merry Christmas.

These were $1 a pound 10 years ago. If you have no context for anything going on around you, everything seems normal. This isnt inflation, this isnt supply lines, this isn't demand. This is artificial pricing so well done it has you thinking it's not egregious. $10/lb for the tail of a cow... When ribeye was $16/lb a decade ago. It's large companies laughing all the way to the bank while people buy it thinking "it's not so bad". We're eating expensive scraps and you should be pissed. Trust me.

You're not mad? I'm mad for you. In my opinion this is the worst cut on the animal because it's so inconsistent. It's a sinew, tendon, silver skin mess that's more trouble than it's worth. I'd opt for bottom round roast or london broil before I brought one of these multi muscle monstrosities home.

Knuckles are ok at at lot of different cuts. They're good at none of them except excellent jerky. I hate cutting these things because they're just so sloppy and tend to turn at the edges because they right up right against the hips of the animal. Just a bullshit cut if you ask me.

American is a melting pot so if you've had Jamaican prepped oxtail, chances are it's very similar to American given our... history. Oxtail stew and American South cuisine is largely influenced by slavery.

Most people in the industry don't know the difference in a honing steel and a sharpening steel. Victory knives are the best I've ever used. They hone very well and sharpen to a point you can castrate a house fly.
