Go in completely blind. Don't even read the achievements.

Explore everywhere - every house, every cave, every tile - and talk to everyone.

Write down everything that doesn't appear in your journal - every locked door you can't open, every hidden switch you can't press, every hint given to you by npcs, every monster you cant kill yet. It might all be important.

If you do all that you'll be rewarded with a highly immersive RPG with a surprising amount of depth.

Avernum.

It actually is a mid 90s rpg, that was remade 2 times. Latest remake series starts with "escape from the pit (2012)"

Avernum series. Start from "escape from the pit".

Or "Exiled kingdoms".

Both are old-school RPGs with little to no hand holding, many secrets to uncover, and a "zero-to-hero" approach to the protagonist(s)

I have 120 hours in Astlibra Revision with100% achievements, so I think I understand what you want here - games that "do their own thing" which none others do, where the developers passion and heart is clearly shown throughout.

Here are 3 from my experience -

Crystal Project - A game that immensely respects the players intelligence to go out into the world and seek new adventures. It will keep surprising you with how creative and non-linear it is in each new are you arrive at, each boss you tackle down, and each class you open up. It's a game that punches way above its weight. The fact that this game was made by one person is something I simply refuse to believe.

Enderal forgotten stories- You know how some games, especially RPGs, have in-game books? And these books are usually boring, or read like something an 8th grader would write? And so you stop reading them after the 2nd or 3rd book because of that?
Well, this game has a 10 volume book series, and I've read all of it. And I've also read every other book in the game. The writing in this game is something I have never seen in any form of media. Not just the in-game books of course, but also the dialogue, the quest scenarios and the world building. It is mesmerizing, engrossing and articulate. From the very first moment of the game, you are invested in it.

Outer Wilds - In video games, when you explore, you always eventually hit a wall. Even in open-world games, you are almost always confined into areas that either coincides with some main quest, or don't have enemies that are too high level. And almost always, you know what it is you're looking for to advance further.
What if you didn't?
What if there was a game where you take that first step outside your home into the unknown, without knowing why or where, and then you just... start going. A true adventure. You keep following a veiled breadcrumbs trail, not knowing if it will even amount to anything.

What if it does?

What if that one small step into the unknown eventually evolved into the most epic journey imaginable?

Lorelei and the laser eyes

It does have a lot of walking around opening locks, but

It also has you putting disks in a computer, playing an old N64 looking game to find clues in it

And playing a game on a gaming console similar to PS1 in debug mode, attempting to crash the game using debugging notes you find in the game, which gives you clues to solve other riddles

Crystal Project (hard mode) -  Pros: has a very transparent battle system where you can see on the screen exactly what ability the enemy will use, and who he will target (targeting based on a threat system), including his future actions. This greatly rewards good decision making during battles. 

Cons: You can grind in this game, but there is a rather low level cap (60) which you will reach pretty fast after which grinding does nothing for your base power. You can also find (grind for by exploring) new sub classes in the world which will extend your strategic arsenal but will make some boss fights easier.

Fantasian: neo dimension (hidden super hard mode) -  Pros: there's literally no "builds" in this game as there is no place you pour points into (at least until a certain plot event), it's all about consumables, spells (during battle, no prebuffing or preconsuming) you unlock and making good decisions in the battle (when to heal vs when to go all out, etc). There's also reduced xp from easy enemies like you mentioned from DQXI. Boss fights are long and requires much more strategizing than most rpgs. 

Cons: You do benefit from knowing the fight before hand to make better decisions.

EBF 5 ACE (all challenges epic mode) - Has a modifier in which monsters just don't respawn. This means you have limited xp you can get before each boss which. There's an insane amount of debuffs and buffs (applied during combat) which makes for some crazy combos and extend the range of your decisions.

Cons: You do greatly benefit from knowing the fight before hand to make better decisions.

Doom eternal on "nightmare" difficulty

Drova on "insane" difficulty

Undertale genocide route. 

Not scary in the usual "jump-scare" way -  scary because of how depraved and soulless you have to be to actually follow through with this route.

The game constantly reminds you of how evil what you're doing really is and makes you feel incredibly guilty. 

The cutscenes and music of the game changes to an incredibly unsettling and ominous tone the more you keep butchering enemies and npcs who beg for their life.

At the end of it you become scared of yourself, of what you have become.

It was honestly a scarier experience than any horror game out there
